Homemade Sourdough Crackers

Crispy, flavorful, and easy to make, these Homemade Sourdough Crackers are perfect for snacking, pairing with cheese, or serving as a party appetizer. They use sourdough starter for a subtle tang and can be customized with herbs, spices, or seeds.

Ingredients
  

  • 1 cup sourdough starter active or discard
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 2 –4 tablespoons water as needed
  • Optional toppings: sea salt sesame seeds, poppy seeds, dried herbs

Equipment

  • Baking sheet
  • Parchment paper
  • Knife or pizza cutter
  • Mixing bowl
  • Pastry brush

Method
 

  1. Preheat oven:
  2. Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. Make the dough:
  4. In a mixing bowl, combine sourdough starter, flour, olive oil, and salt.
  5. Mix until a smooth dough forms, adding water 1 tablespoon at a time if needed.
  6. Roll out the dough:
  7. On a lightly floured surface, roll dough as thinly as possible (about 1/8 inch thick).
  8. Cut the crackers:
  9. Use a knife or pizza cutter to cut the dough into squares, rectangles, or desired shapes.
  10. Transfer to the prepared baking sheet.
  11. Add toppings:
  12. Brush lightly with olive oil and sprinkle with sea salt, seeds, or herbs as desired.
  13. Bake:
  14. Bake for 20–25 minutes, until crisp and golden brown.
  15. Let cool completely on a wire rack; crackers will continue to crisp as they cool.

Notes

Store in an airtight container at room temperature for up to 1 week.
Experiment with herbs, garlic powder, or grated cheese for different flavors.
Ensure dough is rolled very thin for maximum crispiness.
