Ingredients

For the Chicken
  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 cup buttermilk (or substitute with yogurt) For marinating
  • 1 cup vegetable oil For frying
For the Coating
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper Adjust according to spice preference

Method

Marinate the Chicken
  1. Start by placing the chicken thighs in a bowl. Pour the buttermilk over the chicken, ensuring each piece is well coated. Let it marinate for 15-20 minutes.
Prepare the Coating
  1. In a separate bowl, mix the flour, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper.
Heat the Oil
  1. In a large, deep skillet, heat about 1-2 inches of vegetable oil over medium-high heat until it reaches about 350°F (175°C).
Coat the Chicken
  1. Remove the chicken from the buttermilk and let excess liquid drip off. Dredge each piece in the flour mixture, ensuring an even coat.
Fry the Chicken
  1. Carefully place the coated chicken thighs into the hot oil in batches. Fry for about 8 minutes on each side until the chicken is golden brown and cooked through.
Drain and Cool
  1. Once cooked, place the fried chicken on a paper towel-lined plate to absorb any excess oil. Let it rest for a few minutes before serving.
Serve
  1. Serve your Homemade Crazy Chicken hot, garnished with your favorite toppings, and enjoy!

Notes

For lighter options, use skinless chicken thighs or boneless thighs. Maintain oil temperature for best frying results. Avoid overcrowding the pan.
