  • 3 pieces ripe bananas (mashed) The riper the bananas, the sweeter your bread will be!
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar You can adjust this for sweetness.
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
Cinnamon Swirl Ingredients
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until combined.
  4. Mix in the baking soda and salt.
  5. Add in the sugar, beaten egg, and vanilla. Stir until well combined.
  6. Fold in the flour until just incorporated—be careful not to overmix!
Cinnamon Swirl Preparation
  1. In a small bowl, mix the cinnamon and brown sugar together.
  2. Half the batter: Pour half of the batter into the prepared loaf pan.
  3. Sprinkle half of the cinnamon-sugar mixture over the batter.
  4. Add the remaining batter and top with the rest of the cinnamon-sugar mixture.
  5. Swirl a knife through the batter to create a marbled effect.
Baking
  1. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with a pat of butter or a drizzle of honey, and enjoy with coffee or tea! Consider adding walnuts or chocolate chips for extra flavor and texture. Store wrapped for 2-3 days or freeze for up to 3 months.
