Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until combined.
- Mix in the baking soda and salt.
- Add in the sugar, beaten egg, and vanilla. Stir until well combined.
- Fold in the flour until just incorporated—be careful not to overmix!
Cinnamon Swirl Preparation
- In a small bowl, mix the cinnamon and brown sugar together.
- Half the batter: Pour half of the batter into the prepared loaf pan.
- Sprinkle half of the cinnamon-sugar mixture over the batter.
- Add the remaining batter and top with the rest of the cinnamon-sugar mixture.
- Swirl a knife through the batter to create a marbled effect.
Baking
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serve warm with a pat of butter or a drizzle of honey, and enjoy with coffee or tea! Consider adding walnuts or chocolate chips for extra flavor and texture. Store wrapped for 2-3 days or freeze for up to 3 months.
