Preparation
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer or a whisk to blend until smooth and creamy.
- Gently fold the cherry pie filling into the cream cheese mixture until evenly distributed.
Assembly
- Lay an egg roll wrapper on a flat surface. Place about 2 tablespoons of the cherry cheesecake filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Seal the edge with a little water.
Cooking
- Preheat your air fryer to 375°F (190°C). Lightly spray or brush the tops of the egg rolls with cooking spray or melted butter.
- Place the egg rolls in a single layer in the air fryer basket, ensuring they aren’t overcrowded. Air fry for 8-10 minutes or until they are golden brown and crispy.
- Once cooked, remove the egg rolls from the air fryer and let them cool for a few minutes.
Serving
- Serve them warm, perhaps with a dusting of powdered sugar on top!
Notes
These egg rolls can be served alone or with vanilla ice cream, whipped cream, or a drizzle of chocolate syrup. Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
