Homemade Air Fryer Cherry Cheesecake Egg Rolls

These delightful egg rolls are filled with creamy cheesecake and sweet cherries, wrapped in a crispy shell and cooked to perfection in an air fryer.

Ingredients
  

Filling
  • 8 oz cream cheese, softened Ensure cream cheese is at room temperature for a smooth filling.
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling (or fresh cherries, pitted and chopped)
Wrapper
  • 10 pieces egg roll wrappers
  • as needed spray Cooking spray (or melted butter for brushing)

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer or a whisk to blend until smooth and creamy.
  2. Gently fold the cherry pie filling into the cream cheese mixture until evenly distributed.
Assembly
  1. Lay an egg roll wrapper on a flat surface. Place about 2 tablespoons of the cherry cheesecake filling in the center of the wrapper.
  2. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Seal the edge with a little water.
Cooking
  1. Preheat your air fryer to 375°F (190°C). Lightly spray or brush the tops of the egg rolls with cooking spray or melted butter.
  2. Place the egg rolls in a single layer in the air fryer basket, ensuring they aren’t overcrowded. Air fry for 8-10 minutes or until they are golden brown and crispy.
  3. Once cooked, remove the egg rolls from the air fryer and let them cool for a few minutes.
Serving
  1. Serve them warm, perhaps with a dusting of powdered sugar on top!

Notes

These egg rolls can be served alone or with vanilla ice cream, whipped cream, or a drizzle of chocolate syrup. Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
