  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 2 cups romaine lettuce, chopped
  • 1/2 cup shredded cheese (cheddar or pepper jack)
  • 1/4 cup salsa
  • 1/4 cup Greek yogurt (or sour cream)
  • 1 tsp taco seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Grill the chicken breast until fully cooked, about 6-8 minutes per side, until the internal temperature reaches 165°F. Dice into bite-sized pieces.
  2. Open the can of black beans, drain, and rinse thoroughly under cold water.
  3. In a spacious bowl, combine the diced grilled chicken, black beans, corn, cherry tomatoes, diced avocado, and chopped romaine lettuce.
  4. Sprinkle taco seasoning over the salad mixture and add salt and pepper to taste.
Serving
  1. Tumble the salad onto a large platter or divide it into individual bowls.
  2. Top each serving with shredded cheese, a generous dollop of salsa, and a spoonful of Greek yogurt.
