  • 1 cup mushrooms, sliced any variety you prefer
  • 1 cup mixed grains like quinoa or barley
  • 4 cups vegetable broth
  • 1 large onion, diced
  • 2 cloves garlic, minced

  • 2 tablespoons olive oil for sautéing

Cooking Steps
  1. In a large pot, heat olive oil over medium heat, then add diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Add the sliced mushrooms and continue to sauté for another 5 minutes until they soften and begin to brown.
  3. Stir in the mixed grains, then pour in the vegetable broth. Bring to a boil, reduce heat to a simmer, and cook for about 15-20 minutes, or until the grains are tender.
  4. Stir in the chopped spinach and cook for an additional 2-3 minutes until the spinach wilts.
  5. Season with salt and pepper to taste, serve warm, and enjoy.

Notes

Substitutions: Swap spinach for kale or Swiss chard; use brown rice or pasta if you don't have mixed grains. Keep an eye on cooking times as grain types may vary. Avoid overcrowding the pot when sautéing mushrooms to prevent sogginess.
