- In a large pot, over medium heat, add a drizzle of olive oil and sauté the onion until it becomes translucent (about 5 minutes). Add the minced garlic and sauté for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground turkey. Use a wooden spoon to break up the turkey as it cooks until it is no longer pink (about 5-7 minutes).
- Stir in the white beans, diced green chilies, cumin, oregano, salt, and pepper. Mix everything well to incorporate.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, so all the flavors meld together.
- Just before serving, stir in the lime juice, and add diced avocado on top. Garnish with fresh cilantro and serve hot.
Notes
For substitutes, ground turkey can be swapped for chicken or other halal-friendly ground meats. Letting the chili sit for an additional 30 minutes post-simmer deepens the flavors. Avoid adding too much salt early on.
