  • 1 whole whole wheat wrap
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 4 large egg whites
  • ½ cup red bell pepper, chopped
  • ¼ cup onion, diced

Preparation
  1. In a non-stick skillet, heat over medium. Add the diced onion and red bell pepper. Sauté for 3-4 minutes until the onion is translucent and the bell pepper softens.
  2. Toss in the chopped spinach and cook for an additional 2 minutes, stirring until wilted.
  3. In a bowl, beat the egg whites and season with salt and pepper. Pour the egg mixture into the skillet, combining it with the sautéed vegetables.
  4. Allow it to cook for about 3-5 minutes, or until the egg is fully set and slightly golden.
  5. Once cooked, take the mixture off the heat and spread it evenly over the whole wheat wrap. Sprinkle crumbled feta on top.
  6. Gently fold the edges and roll the wrap tightly.
  7. Optionally, grill it on a pan for a minute to achieve a nice crispy exterior.
  8. Slice and serve warm, enjoying the delightful harmony of flavors in every bite!

Notes

You can use low-fat cheese or a different kind of wrap, like a spinach wrap. Cooking vegetables to the right tenderness enhances flavor and texture. Store leftovers tightly in foil or a resealable bag for up to 3 days.
