- In a non-stick skillet, heat over medium. Add the diced onion and red bell pepper. Sauté for 3-4 minutes until the onion is translucent and the bell pepper softens.
- Toss in the chopped spinach and cook for an additional 2 minutes, stirring until wilted.
- In a bowl, beat the egg whites and season with salt and pepper. Pour the egg mixture into the skillet, combining it with the sautéed vegetables.
- Allow it to cook for about 3-5 minutes, or until the egg is fully set and slightly golden.
- Once cooked, take the mixture off the heat and spread it evenly over the whole wheat wrap. Sprinkle crumbled feta on top.
- Gently fold the edges and roll the wrap tightly.
- Optionally, grill it on a pan for a minute to achieve a nice crispy exterior.
