Ingredients
  

For the Dough
  • 2 cups sourdough starter Discarded sourdough starter works perfectly.
  • 1/4 cup milk Can use any type of milk.
  • 1/4 cup sugar Adjust sweetness to taste.
  • 1/2 cup unsalted butter, softened Make sure it's at room temperature.
  • 2 large eggs Use large eggs for best results.
  • 4 cups all-purpose flour May need slightly more or less depending on humidity.
  • 1 teaspoon salt Essential for flavor.
For the Filling
  • to taste filling of choice (fruit jam, cheese, or poppy seed) Choose your favorite filling.

Method
 

Preparation
  1. In a large mixing bowl, combine the sourdough starter, milk, sugar, softened butter, and eggs. Mix well until fully combined.
  2. Gradually add the flour and salt to the mixture. Stir until a dough forms.
  3. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
  5. While the dough is rising, preheat your oven to 375°F (190°C).
Shaping and Baking
  1. Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thick. Cut into squares or circles.
  2. Place a generous spoonful of your chosen filling in the center of each piece. Fold the dough over (if using squares) or pinch the edges together (if using circles) to seal.
  3. Place the filled kolaches on greased baking sheets. Cover and let them rise again for about 20-30 minutes.
  4. Bake in the preheated oven for 15-20 minutes or until lightly golden brown.
  5. Remove from the oven and let cool slightly before enjoying.

Notes

Feel free to swap fillings to match your family's tastes! For a nutty spin, consider almond paste or Nutella. To store, keep in an airtight container in the fridge for up to a week or freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
