Method
Preparation
- In a large mixing bowl, combine the sourdough starter, milk, sugar, softened butter, and eggs. Mix well until fully combined.
- Gradually add the flour and salt to the mixture. Stir until a dough forms.
- Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
- While the dough is rising, preheat your oven to 375°F (190°C).
Shaping and Baking
- Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thick. Cut into squares or circles.
- Place a generous spoonful of your chosen filling in the center of each piece. Fold the dough over (if using squares) or pinch the edges together (if using circles) to seal.
- Place the filled kolaches on greased baking sheets. Cover and let them rise again for about 20-30 minutes.
- Bake in the preheated oven for 15-20 minutes or until lightly golden brown.
- Remove from the oven and let cool slightly before enjoying.
Notes
Feel free to swap fillings to match your family's tastes! For a nutty spin, consider almond paste or Nutella. To store, keep in an airtight container in the fridge for up to a week or freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
