- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with a paper towel and season both sides with salt and pepper.
- In a baking dish, arrange the cod fillets in a single layer and spread 2 tablespoons of basil pesto over each fillet.
- Sprinkle the grated parmesan cheese evenly over the pesto-coated cod, pressing it down gently.
- Drizzle olive oil over the top.
- Place the baking dish in the preheated oven and bake for 15-20 minutes, until the cod flakes easily with a fork.
- Garnish with fresh basil leaves if desired and serve hot.
