  • 4 fillets cod fillets (about 6 ounces each), fresh or thawed Select fresh, firm fillets.
  • 1 cup basil pesto (store-bought or homemade) Feel free to make your own homemade pesto if time allows.
  • ½ cup grated Parmesan cheese Press down gently to help it stick.
  • 2 tablespoons olive oil Drizzle over the top for flavor.
  • Salt and pepper to taste Season both sides of the cod.
  • Fresh basil leaves for garnish (optional) Garnish for serving.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with a paper towel and season both sides with salt and pepper.
  3. In a baking dish, arrange the cod fillets in a single layer and spread 2 tablespoons of basil pesto over each fillet.
  4. Sprinkle the grated parmesan cheese evenly over the pesto-coated cod, pressing it down gently.
  5. Drizzle olive oil over the top.
  6. Place the baking dish in the preheated oven and bake for 15-20 minutes, until the cod flakes easily with a fork.
  7. Garnish with fresh basil leaves if desired and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or a skillet to maintain texture. For long-term storage, freeze for 1-2 months.
