  • 2 slices whole grain bread
  • 0.5 cup egg whites
  • 0.25 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 1 tablespoon cooking spray or oil for pan For greasing the skillet

Method
 

Preparation
  1. In a bowl, whisk together 1/2 cup of egg whites, 1/4 cup of unsweetened almond milk, 1 teaspoon of vanilla extract, and 1/2 teaspoon of cinnamon until well combined.
  2. Preheat a non-stick skillet or frying pan over medium heat and lightly coat it with cooking spray or a small amount of oil.
Cooking
  1. Dip a slice of whole grain bread into the egg mixture, ensuring both sides are coated well.
  2. Place the dipped bread onto the hot skillet and cook for 2-3 minutes on each side or until golden brown. Repeat with the second slice.
  3. Once both slices are cooked, remove from the skillet and serve them stacked high.
Serving
  1. Top with fresh berries and a drizzle of maple syrup or honey as desired.

Notes

Feel free to use different varieties of whole grain or gluten-free bread. Add a sprinkle of nutmeg or your favorite spices to the egg mixture for extra flavor. Store leftovers in the refrigerator for up to 3 days, or freeze for up to a month.
