Method
Prepare the Pasta
- Bring a large pot of salted water to a boil. Add in 8 oz of pasta and cook according to the package instructions until al dente. Drain and set aside.
Cook the Chicken
- While the pasta is cooking, season the chicken breasts with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- When hot, add the chicken and cook for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Once done, remove from the skillet and let it rest before slicing.
Make the Sauce
- In the same skillet, add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn it!
- Pour in 1 cup of chicken broth and bring it to a gentle simmer.
Combine Ingredients
- Lower the heat and mix in 1 cup of grated Parmesan cheese until melted and creamy.
- Stir in the cooked pasta, adding a splash of the pasta cooking water if the sauce seems too thick.
- Slice the chicken and toss it with the pasta and sauce. If using, stir in 1 cup of fresh spinach until wilted.
- Garnish with chopped parsley and additional cheese if desired.
Serve
- Serve warm and watch your family relish every bite!
Notes
If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze for up to a month. Reheat gently on the stovetop with a splash of water or broth.
