Ingredients
  

Pasta and Chicken
  • 8 oz pasta (your favorite type, such as penne or fettuccine) Use any pasta you prefer.
  • 2 boneless, skinless chicken breasts Ensure the chicken is cut evenly for consistent cooking.
  • 2 tablespoons olive oil For cooking the chicken.
Sauce Ingredients
  • 4 cloves garlic, minced Fresh garlic is recommended for better flavor.
  • 1 cup chicken broth Use low-sodium if preferred.
  • 1 cup Parmesan cheese, grated Freshly grated cheese will melt better.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1 cup fresh spinach (optional) For added color and nutrition.
Garnishing
  • to taste Chopped parsley for garnish Adds freshness to the dish.

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add in 8 oz of pasta and cook according to the package instructions until al dente. Drain and set aside.
Cook the Chicken
  1. While the pasta is cooking, season the chicken breasts with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. When hot, add the chicken and cook for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Once done, remove from the skillet and let it rest before slicing.
Make the Sauce
  1. In the same skillet, add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn it!
  2. Pour in 1 cup of chicken broth and bring it to a gentle simmer.
Combine Ingredients
  1. Lower the heat and mix in 1 cup of grated Parmesan cheese until melted and creamy.
  2. Stir in the cooked pasta, adding a splash of the pasta cooking water if the sauce seems too thick.
  3. Slice the chicken and toss it with the pasta and sauce. If using, stir in 1 cup of fresh spinach until wilted.
  4. Garnish with chopped parsley and additional cheese if desired.
Serve

Notes

If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze for up to a month. Reheat gently on the stovetop with a splash of water or broth.
