Preparation
  1. In a mixing bowl, combine the cottage cheese, mashed banana, and eggs. Whisk until well-blended.
  2. In a separate bowl, mix the all-purpose flour, baking powder, cinnamon, and salt. Slowly fold the dry mixture into the wet ingredients until just combined.
  3. Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray.
Cooking
  1. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until small bubbles form on the surface, approximately 2-3 minutes.
  2. Carefully flip the pancakes and cook for an additional 1-2 minutes until golden brown. Remove from the skillet and keep warm.
  3. Repeat with the remaining batter, and serve the pancakes warm with your choice of toppings.
