  • 2 pounds beef chuck roast, cut into 1-inch pieces
  • 1 cup low-sodium soy sauce
  • 1/4 cup brown sugar or coconut sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons cornstarch mixed with 2 tablespoons water (for thickening)
  • 1 cup beef broth
  • to taste sliced green onions, for garnish
  • to taste sesame seeds, for garnish
  • as needed cooked rice or noodles, for serving

Method
 

Preparation
  1. Begin by cutting your beef chuck roast into 1-inch pieces.
  2. In a medium bowl, whisk together the low-sodium soy sauce, brown sugar (or coconut sugar), sesame oil, minced garlic, and grated ginger until well combined.
  3. Place the beef pieces in the slow cooker and pour the sauce mixture over the top. Toss to ensure the meat is evenly coated in the sauce.
Cooking
  1. Pour the beef broth into the slow cooker. Cover and cook on low for 6 to 8 hours, or on high for 4 to 5 hours, until the beef is tender.
  2. Once the cooking time is up, mix the cornstarch and water together to create a slurry. Stir it into the sauce and cook for an additional 15 minutes until thickened.
Serving
  1. Serve the beef over cooked rice or noodles. Top with sliced green onions and sesame seeds.

Notes

For a gluten-free option, substitute tamari or coconut aminos for soy sauce. You can also use pre-cut beef for quicker prep.
