Preparation
- Begin by cutting your beef chuck roast into 1-inch pieces.
- In a medium bowl, whisk together the low-sodium soy sauce, brown sugar (or coconut sugar), sesame oil, minced garlic, and grated ginger until well combined.
- Place the beef pieces in the slow cooker and pour the sauce mixture over the top. Toss to ensure the meat is evenly coated in the sauce.
Cooking
- Pour the beef broth into the slow cooker. Cover and cook on low for 6 to 8 hours, or on high for 4 to 5 hours, until the beef is tender.
- Once the cooking time is up, mix the cornstarch and water together to create a slurry. Stir it into the sauce and cook for an additional 15 minutes until thickened.
Serving
- Serve the beef over cooked rice or noodles. Top with sliced green onions and sesame seeds.
Notes
For a gluten-free option, substitute tamari or coconut aminos for soy sauce. You can also use pre-cut beef for quicker prep.
