Preparation
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes. Cut them into thin strips, about 1/4-inch thick.
- In a large bowl, toss the sweet potato strips with olive oil, paprika, garlic powder, salt, and pepper.
- Spread the sweet potato fries in a single layer on a baking sheet lined with parchment paper.
Cooking
- Bake for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove from the oven and sprinkle with fresh herbs if desired.
Notes
For extra crispiness, soak sweet potato strips in cold water for at least 30 minutes before cooking. Store leftovers in an airtight container for up to 3 days and reheat in the oven to restore crunch.
