Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a food processor, combine the pitted dates and blend until they form a sticky paste.
- Add the peanut butter, oats, cocoa powder, salt, and vanilla extract to the blended dates. Process until all ingredients are well combined.
- If using, fold the chocolate chips into the mixture with a spatula.
- Using a tablespoon, scoop out the mixture and shape it into balls. Place them onto the prepared baking sheet, leaving space between each cookie.
- Gently flatten each cookie ball with your fingers for even baking.
- Bake in the preheated oven for 10-12 minutes until soft but firm. They'll harden as they cool.
- Let the cookies sit on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to 2 months. Thaw at room temperature and warm in the microwave for about 10 seconds if desired.
