  • 2 cups cooked chicken, diced Use grilled or rotisserie chicken for convenience.
  • 1 cup Greek yogurt Plain, non-fat or full-fat based on preference.
  • 1 cup celery, finely chopped
  • 1 cup red grapes, halved Or apple for a crunch.
  • 1 small red onion, finely diced
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional.

Method
 

Preparation
  1. Cook your chicken by grilling or roasting until fully cooked. Let it cool before dicing into bite-sized chunks.
  2. Dice the celery and finely chop the red onion. If you’re using grapes, halve them.
  3. In a large bowl, combine the Greek yogurt, lemon juice, garlic powder, salt, and pepper. Mix well until smooth and creamy.
  4. Add the chicken, celery, grapes, and red onion to the bowl with the dressing. Gently fold everything together until well-coated.
  5. Taste and adjust seasoning with more salt or pepper if needed.
  6. Garnish with fresh parsley if desired and refrigerate for about 30 minutes before serving for optimal flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing for more than a month to maintain texture. Serve chilled.
