  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon ginger (grated)
  • 1 tablespoon garlic (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation
  1. Season the chicken breasts generously with salt and pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet. Cook them for about 5-6 minutes on each side, or until they are golden brown and fully cooked through.
  4. While the chicken is cooking, gather a bowl and mix together the soy sauce, brown sugar, ginger, garlic, and pineapple chunks. Stir until the sugar has dissolved.
  5. Once the chicken is cooked, pour the sauce over the chicken in the skillet. Ensure that the chicken is coated well. Let it simmer for about 5 minutes until the sauce thickens slightly.
  6. Transfer the chicken to a serving platter, drizzling any extra sauce over the top. Finish off with a sprinkle of chopped green onions.

Notes

For a twist, use turkey or chicken thighs instead of chicken breasts. Ensure the chicken is cooked through with a meat thermometer reading 165°F. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
