Preparation
- Season the chicken breasts generously with salt and pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the seasoned chicken breasts to the skillet. Cook them for about 5-6 minutes on each side, or until they are golden brown and fully cooked through.
- While the chicken is cooking, gather a bowl and mix together the soy sauce, brown sugar, ginger, garlic, and pineapple chunks. Stir until the sugar has dissolved.
- Once the chicken is cooked, pour the sauce over the chicken in the skillet. Ensure that the chicken is coated well. Let it simmer for about 5 minutes until the sauce thickens slightly.
- Transfer the chicken to a serving platter, drizzling any extra sauce over the top. Finish off with a sprinkle of chopped green onions.
Notes
For a twist, use turkey or chicken thighs instead of chicken breasts. Ensure the chicken is cooked through with a meat thermometer reading 165°F. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
