  • 2 cans cans butter beans, drained and rinsed 15 ounces each
  • 2 tablespoons harissa paste Adjust to taste
  • 2 tablespoons olive oil Use a good quality for better flavor
  • 2 cloves garlic, minced Sauté gently to avoid burning
  • 1 each lemon, juiced
  • Salt & pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish

Method
 

Cooking Steps
  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to let it brown.
  3. Stir in the drained butter beans and warm them through for about 3–4 minutes.
  4. Mix in the harissa paste, ensuring each bean is coated, and cook for another 2-3 minutes.
  5. Squeeze the lemon juice over the mixture and season with salt and pepper to taste.
  6. Serve warm, garnished with chopped fresh herbs on top.

Notes

For substitutions, try using Sriracha or a blend of paprika and cayenne if harissa paste is unavailable. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
