Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add the olive oil and sauté the chopped onions and garlic until fragrant, about 2 minutes.
- Add the ground beef and cook until no longer pink. Drain any excess fat.
- Stir in the bell peppers, canned tomatoes, frozen mixed vegetables, cumin, salt, and pepper. Cook for an additional 5-7 minutes, until the vegetables are softened.
Assembly
- In a greased 9x13 inch baking dish, spread the beef mixture evenly at the bottom.
- Sprinkle the shredded cheese over the meat mixture.
- Open the biscuit dough and place the biscuits on top of the meat and cheese layer.
Baking
- Place the casserole in the preheated oven and bake for 25-30 minutes or until the biscuits are golden brown and cooked through.
- As soon as it comes out of the oven, let it sit for about 5 minutes before serving.
Notes
For substitutions, ground turkey or chicken can be used instead of beef. Leftover meat can be a quick shortcut. Be sure to drain the fat to avoid a greasy casserole. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
