Ingredients
  

Meat and Vegetables
  • 1 lb ground beef (certified Halal)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (any color you prefer)
  • 1 cup canned diced tomatoes (drained)
  • 1/2 cup frozen mixed vegetables (peas, carrots, corn)
Toppings and Seasoning
  • 1 cup cheddar cheese, shredded
  • 1 package biscuit dough (make sure it’s halal-friendly)
  • 1 teaspoon ground cumin
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil (for sautéing)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the olive oil and sauté the chopped onions and garlic until fragrant, about 2 minutes.
  3. Add the ground beef and cook until no longer pink. Drain any excess fat.
  4. Stir in the bell peppers, canned tomatoes, frozen mixed vegetables, cumin, salt, and pepper. Cook for an additional 5-7 minutes, until the vegetables are softened.
Assembly
  1. In a greased 9x13 inch baking dish, spread the beef mixture evenly at the bottom.
  2. Sprinkle the shredded cheese over the meat mixture.
  3. Open the biscuit dough and place the biscuits on top of the meat and cheese layer.
Baking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes or until the biscuits are golden brown and cooked through.
  2. As soon as it comes out of the oven, let it sit for about 5 minutes before serving.

Notes

For substitutions, ground turkey or chicken can be used instead of beef. Leftover meat can be a quick shortcut. Be sure to drain the fat to avoid a greasy casserole. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
