  • 2 oz cream cheese, softened
  • 1 large egg large egg, beaten
Filling Ingredients
  • 2 tbsp cinnamon
  • 2 tbsp erythritol or your favorite keto-friendly sweetener adjust according to sweetness preference
  • 1 tsp vanilla extract

Preparation
  1. In a medium bowl, mix together the almond flour, softened cream cheese, and egg until a dough forms. Make sure it's well-combined without lumps.
  2. Place the dough between two sheets of parchment paper. Roll it out into a thin rectangle, about 1/4 inch thick.
  3. In a separate bowl, combine the cinnamon and erythritol sweetener to create the filling mixture.
  4. Once the dough is rolled out, take a spoon and evenly sprinkle the cinnamon mixture over the surface.
  5. Carefully lift one edge of the parchment paper and roll the dough tightly into a log shape. Use the parchment paper to help guide it.
  6. With a sharp knife, slice the roll into 1-inch pieces.
Cooking
  1. Heat a non-stick pan over medium heat and spray it lightly with cooking oil. Cook each roll-up for about 2-3 minutes on each side or until golden brown and crispy.
  2. Once cooked, serve these delicious roll-ups warm, with your choice of toppings or enjoy them plain!

For extra crispiness, ensure your oil is hot enough before frying. Store leftovers in the refrigerator for 3-4 days or freeze for a month.
