- In a medium bowl, mix together the almond flour, softened cream cheese, and egg until a dough forms. Make sure it's well-combined without lumps.
- Place the dough between two sheets of parchment paper. Roll it out into a thin rectangle, about 1/4 inch thick.
- In a separate bowl, combine the cinnamon and erythritol sweetener to create the filling mixture.
- Once the dough is rolled out, take a spoon and evenly sprinkle the cinnamon mixture over the surface.
- Carefully lift one edge of the parchment paper and roll the dough tightly into a log shape. Use the parchment paper to help guide it.
- With a sharp knife, slice the roll into 1-inch pieces.
Cooking
- Heat a non-stick pan over medium heat and spray it lightly with cooking oil. Cook each roll-up for about 2-3 minutes on each side or until golden brown and crispy.
- Once cooked, serve these delicious roll-ups warm, with your choice of toppings or enjoy them plain!
