  • 1 cup almond flour Base ingredient for the roll-ups.
  • 2 large eggs Bind the dough together.
  • 1 tsp vanilla extract Adds sweetness and flavor.
  • 1 tsp baking powder Helps the dough rise.
  • 2 tbsp erythritol Can substitute with your preferred sweetener.
  • 2 tbsp butter, melted Used for frying.
For the filling
  • 4 oz cream cheese, softened Main filling ingredient.
  • 1 tsp ground cinnamon Adds flavor to the filling.

Method
 

Preparation
  1. In a mixing bowl, combine the almond flour, baking powder, and erythritol.
  2. In a separate bowl, whisk together the softened cream cheese, eggs, and vanilla extract until smooth.
  3. Slowly incorporate the dry ingredients into the wet mixture, stirring until a dough forms.
Forming the Roll-Ups
  1. Place the dough between two sheets of parchment paper and roll it into a thin rectangle.
  2. Sprinkle the cinnamon evenly over the dough.
  3. Carefully roll the dough tightly from one end to the other, forming a log.
  4. Cut the log into individual roll-ups.
Cooking
  1. Heat the melted butter in a frying pan over medium heat.
  2. Add the roll-ups and cook until golden brown and crispy on all sides.
  3. Allow to cool slightly and enjoy warm.
