Preparation
- Preheat your oven to 400°F (200°C).
- In a large pot, boil diced sweet potatoes in salted water for about 10-15 minutes until fork-tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.
- Stir in the ground turkey and cook until browned, breaking it apart as it cooks (about 5-7 minutes). Season with cumin, paprika, salt, and pepper to taste.
- In a baking dish, layer the turkey mixture first, followed by the sweet potatoes. Make sure the sweet potatoes are evenly distributed over the turkey.
- Sprinkle shredded cheese over the top evenly.
Baking
- Place the dish in your preheated oven and bake for 20 minutes or until the cheese is bubbly and golden brown.
Serving
- Let it cool for a few minutes before serving. Enjoy the layers of flavor and textures!
Notes
Substitutions for ground turkey can include ground chicken or a plant-based alternative. Be mindful of the oven temperature; if the cheese is browning too quickly, lower the temperature slightly or cover with foil.
