  • 2 large sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 each bell pepper, diced (any color you prefer)
  • 1 tsp ground cumin
  • 1 tsp paprika

  • 1 cup shredded cheese (try a mild cheddar or mozzarella)
  • 2 tablespoons olive oil

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, boil diced sweet potatoes in salted water for about 10-15 minutes until fork-tender. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.
  4. Stir in the ground turkey and cook until browned, breaking it apart as it cooks (about 5-7 minutes). Season with cumin, paprika, salt, and pepper to taste.
  5. In a baking dish, layer the turkey mixture first, followed by the sweet potatoes. Make sure the sweet potatoes are evenly distributed over the turkey.
  6. Sprinkle shredded cheese over the top evenly.
Baking
  1. Place the dish in your preheated oven and bake for 20 minutes or until the cheese is bubbly and golden brown.
