  • 1 medium butternut squash, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika

Preparation
  1. Peel and dice the butternut squash, dice the onion, and mince the garlic.
Cooking
  1. Heat a tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic to the skillet, sauté for 3-4 minutes until softened.
  3. Stir in the ground turkey, breaking it apart with a spoon, and season with paprika, salt, and pepper. Cook for 5-7 minutes until browned.
  4. Add the diced butternut squash, stir to combine, cover, and cook for 10-12 minutes or until the squash is tender.
  5. Taste and adjust seasoning as necessary, then remove from heat, garnish with parsley, and serve.

Notes

To store, keep in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat gently in a skillet or microwave in short intervals.
