Ingredients
  

Zucchini Ingredients
  • 4 medium medium zucchinis, sliced into 1/4-inch thick rounds Look for firm zucchinis with smooth skin.
  • 3 tablespoons olive oil Use extra virgin for a richer flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup parmesan cheese (optional) Sprinkle over zucchini before removing from grill.

Method
 

Preparation
  1. Preheat your grill to medium heat (about 375°F).
  2. Wash and slice your zucchinis into 1/4-inch thick rounds.
  3. In a large mixing bowl, combine the zucchini rounds with olive oil, salt, black pepper, and garlic powder. Toss until all pieces are lightly coated.
Grilling
  1. Place the zucchini slices directly on the grill grates. Let them cook for about 5 minutes on one side, then flip each slice using tongs.
  2. Cook for another 3-5 minutes or until they are grill-marked and tender.
Serving
  1. If desired, sprinkle parmesan cheese over the zucchini a minute before taking them off the grill to melt slightly.
  2. Remove from the grill, garnish with extra cheese if desired, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze them for up to 2 months. Reheat in a preheated oven at 375°F for 5-10 minutes.
