Preparation
- Preheat your grill to medium heat (about 375°F).
- Wash and slice your zucchinis into 1/4-inch thick rounds.
- In a large mixing bowl, combine the zucchini rounds with olive oil, salt, black pepper, and garlic powder. Toss until all pieces are lightly coated.
Grilling
- Place the zucchini slices directly on the grill grates. Let them cook for about 5 minutes on one side, then flip each slice using tongs.
- Cook for another 3-5 minutes or until they are grill-marked and tender.
Serving
- If desired, sprinkle parmesan cheese over the zucchini a minute before taking them off the grill to melt slightly.
- Remove from the grill, garnish with extra cheese if desired, and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze them for up to 2 months. Reheat in a preheated oven at 375°F for 5-10 minutes.
