Preparation
- In a bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper to prepare the marinade.
- Place the chicken thighs in a resealable plastic bag or a bowl, then pour the marinade over the chicken. Seal the bag or cover the bowl, and let it marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat.
Grilling
- Remove the chicken from the marinade and place it on the hot grill. Cook for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C).
- Once grilled to perfection, remove the chicken from the grill, sprinkle with sesame seeds and sliced scallions, and serve hot.
Notes
Marinate for a longer time for more flavor, but avoid marinating for more than 24 hours to maintain the chicken's texture. High heat results in delicious char; avoid flipping the chicken too often.
