Preparation
  1. Preheat your grill to medium heat.
  2. Place each chicken breast between two sheets of plastic wrap and pound with a meat mallet or rolling pin until they are about 1/2-inch thick.
  3. Season both sides of each chicken breast with salt and pepper.
  4. Lay one slice of cheese and one slice of deli turkey on each chicken breast, then fold the chicken over to form a sandwich. Secure with toothpicks if needed.
Cooking
  1. Set up a dredging station with three shallow bowls—one with flour, one with beaten eggs, and one with breadcrumbs.
  2. Dip each folded chicken sandwich first in the flour, then in the egg, and finally in the breadcrumbs, ensuring they're evenly coated.
  3. Drizzle olive oil on the grill and place the chicken on it. Cook for about 5-6 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
Assembly
  1. Once cooked, let the chicken rest for a few minutes.
  2. Place a sandwich on a bun, and top with fresh lettuce and tomato. Add your choice of condiments.

For a fun twist, try using Halal-friendly bacon turkey or crispy fried onions for additional flavor and texture. Store leftovers in the refrigerator for up to 3 days and reheat in the oven to maintain crispiness.
