- Preheat your grill to medium heat.
- Place each chicken breast between two sheets of plastic wrap and pound with a meat mallet or rolling pin until they are about 1/2-inch thick.
- Season both sides of each chicken breast with salt and pepper.
- Lay one slice of cheese and one slice of deli turkey on each chicken breast, then fold the chicken over to form a sandwich. Secure with toothpicks if needed.
Cooking
- Set up a dredging station with three shallow bowls—one with flour, one with beaten eggs, and one with breadcrumbs.
- Dip each folded chicken sandwich first in the flour, then in the egg, and finally in the breadcrumbs, ensuring they're evenly coated.
- Drizzle olive oil on the grill and place the chicken on it. Cook for about 5-6 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
Assembly
- Once cooked, let the chicken rest for a few minutes.
- Place a sandwich on a bun, and top with fresh lettuce and tomato. Add your choice of condiments.
