Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken with half of the green chile sauce. Add salt and pepper to taste and mix until well-coated.
- Lay out a tortilla on a clean surface. Spoon a generous amount of the chicken mixture onto the center of the tortilla and top with a sprinkle of cheese.
- Fold the sides of the tortilla inwards and then roll from the bottom up to form a burrito. Place the burrito seam-side down in a greased baking dish.
- Continue assembling the remaining burritos until all the filling is used.
Baking
- Pour the remaining green chile sauce over the assembled burritos, ensuring they are well covered. Sprinkle the remaining cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes. Remove the foil during the last 5 minutes.
- Once done, remove from the oven and allow to cool for a few minutes.
- Drizzle with sour cream and sprinkle cilantro before serving.
Notes
These burritos can be adorned with your favorite toppings. They store well in the refrigerator for 3-4 days and freeze for up to 2 months.
