Green Chile Chicken Smothered Burritos

Ingredients
  

Burrito Fillings
  • 2 cups cooked chicken, shredded Make sure your chicken is fully cooked.
  • 1 cup green chile sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
Toppings
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken with half of the green chile sauce. Add salt and pepper to taste and mix until well-coated.
  3. Lay out a tortilla on a clean surface. Spoon a generous amount of the chicken mixture onto the center of the tortilla and top with a sprinkle of cheese.
  4. Fold the sides of the tortilla inwards and then roll from the bottom up to form a burrito. Place the burrito seam-side down in a greased baking dish.
  5. Continue assembling the remaining burritos until all the filling is used.
Baking
  1. Pour the remaining green chile sauce over the assembled burritos, ensuring they are well covered. Sprinkle the remaining cheese on top.
  2. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes. Remove the foil during the last 5 minutes.
  3. Once done, remove from the oven and allow to cool for a few minutes.
  4. Drizzle with sour cream and sprinkle cilantro before serving.

Notes

These burritos can be adorned with your favorite toppings. They store well in the refrigerator for 3-4 days and freeze for up to 2 months.
