  • 14 oz firm tofu, drained and pressed
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 2 cloves garlic, minced
  • 1 Juice of 1 lemon
  • 1 medium cucumber, diced
  • 2 medium tomatoes, diced
  • ½ small red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Preparation
  1. Begin by draining and pressing the firm tofu to remove as much moisture as possible. Cut the tofu into bite-sized cubes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the cubed tofu and sprinkle it with salt and pepper. Cook until golden brown and crispy on all sides, about 10-15 minutes, turning occasionally.
  3. In a small bowl, mix together the minced garlic, lemon juice, a drizzle of olive oil, and oregano. Whisk until well combined.
  4. In a large mixing bowl, combine the diced cucumber, tomatoes, sliced red onion, and Kalamata olives. Toss these ingredients together before adding the crispy tofu.
  5. Drizzle the prepared dressing over the tofu and vegetable mix. Gently toss everything together to ensure the tofu and veggies are well coated. Top with crumbled feta cheese.
  6. Serve immediately and enjoy the fresh, zesty flavors in each bite!

Notes

For a vegan version, you can skip the feta or use a plant-based alternative. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet over low heat with a drizzle of olive oil to maintain the crispy texture.
