Preparation
- In a large bowl, combine the ground lamb, ground beef, breadcrumbs, grated Parmesan, finely chopped onion, minced garlic, egg, fresh oregano, fresh parsley, salt, and pepper. Mix everything together until well combined.
- Take small portions of the mixture and roll them into meatballs about the size of a golf ball.
Cooking
- In a large skillet, heat a drizzle of olive oil over medium heat. Gently place the meatballs into the skillet, ensuring there’s space between each one. Brown them for about 5-6 minutes, turning occasionally to achieve an even cook.
- Once the meatballs are browned, add the sliced mushrooms into the skillet. Then pour in the tomato sauce, stirring gently to combine. Allow everything to simmer together for 20-25 minutes on low heat.
Serving
- Once cooked through, serve the meatballs hot over rice, pasta, or with a hearty loaf of bread to soak up that delicious sauce.
Notes
Feel free to swap ground lamb for turkey or chicken for a leaner option. Ensure that the meatballs cook fully in the sauce for the best flavor. Avoid overcrowding the skillet to prevent meatballs from breaking apart.
