Preparation
- In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Toss in the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt, pepper, and oregano if using. Remove from heat and set aside.
Assembling the Sandwich
- Take one slice of bread and layer it with a generous portion of shredded mozzarella cheese.
- Spoon the sautéed spinach mixture evenly over the cheese, followed by the crumbled feta on top.
- Top with another layer of shredded mozzarella and place the second slice of bread on top.
Grilling
- In the same skillet, melt a little more olive oil or butter over medium heat. Grill the sandwich for 3-4 minutes on one side until golden brown.
- Carefully flip the sandwich and grill the other side until the cheese has melted and the bread is perfect.
Serving
- Remove from the skillet, slice in half, and serve hot. Enjoy your delicious creation!
Notes
Customize your cheeses or add protein such as grilled chicken or turkey slices for a heartier sandwich. For best results, spread a thin layer of butter on the outside of each slice before grilling for extra crispy bread.
