Ingredients
  

Bread
  • 2 slices slices of whole-grain or sourdough bread Choose your favorite type.
Filling
  • 1 cup fresh spinach Washed and trimmed.
  • 1/2 cup shredded mozzarella cheese For melting and flavor.
  • 1/4 cup crumbled feta cheese Optional but recommended.
  • 1 clove garlic, minced For sautéing.
  • 1 tablespoon olive oil For sautéing and grilling.
  • to taste Salt and pepper Adjust according to preference.
  • a pinch dried oregano (optional) Adds Mediterranean flavor.

Method
 

Preparation
  1. In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Toss in the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt, pepper, and oregano if using. Remove from heat and set aside.
Assembling the Sandwich
  1. Take one slice of bread and layer it with a generous portion of shredded mozzarella cheese.
  2. Spoon the sautéed spinach mixture evenly over the cheese, followed by the crumbled feta on top.
  3. Top with another layer of shredded mozzarella and place the second slice of bread on top.
Grilling
  1. In the same skillet, melt a little more olive oil or butter over medium heat. Grill the sandwich for 3-4 minutes on one side until golden brown.
  2. Carefully flip the sandwich and grill the other side until the cheese has melted and the bread is perfect.
Serving
  1. Remove from the skillet, slice in half, and serve hot. Enjoy your delicious creation!

Notes

Customize your cheeses or add protein such as grilled chicken or turkey slices for a heartier sandwich. For best results, spread a thin layer of butter on the outside of each slice before grilling for extra crispy bread.
