Preparation
- Preheat your oven to 300°F (150°C).
- If using fresh pumpkin seeds, rinse them under cold water to remove any pumpkin flesh and pat them dry.
- In a mixing bowl, combine the pumpkin seeds with olive oil, garlic powder, and salt. Toss them until evenly coated.
- Line a baking sheet with parchment paper and spread the seasoned seeds in a single layer.
Roasting
- Place the baking sheet in the preheated oven and roast the seeds for about 20-25 minutes, stirring halfway through.
- Once golden and fragrant, remove the seeds from the oven and let them cool before serving.
Notes
Store leftovers in an airtight container at room temperature for about a week. For longer storage, refrigerate them for up to a month. Reheat at 250°F (120°C) for 5-10 minutes if desired.
