  • 1 cup raw pumpkin seeds (pepitas) Can use seeds from a fresh pumpkin or pre-packaged raw seeds.
  • 1 tablespoon olive oil To coat the seeds for roasting.
  • 1 teaspoon garlic powder For flavoring the seeds.
  • 1 teaspoon salt Adjust to taste.
  • to taste additional spices (paprika, cayenne pepper, or herbs) Optional for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. If using fresh pumpkin seeds, rinse them under cold water to remove any pumpkin flesh and pat them dry.
  3. In a mixing bowl, combine the pumpkin seeds with olive oil, garlic powder, and salt. Toss them until evenly coated.
  4. Line a baking sheet with parchment paper and spread the seasoned seeds in a single layer.
Roasting
  1. Place the baking sheet in the preheated oven and roast the seeds for about 20-25 minutes, stirring halfway through.
  2. Once golden and fragrant, remove the seeds from the oven and let them cool before serving.

Notes

Store leftovers in an airtight container at room temperature for about a week. For longer storage, refrigerate them for up to a month. Reheat at 250°F (120°C) for 5-10 minutes if desired.
