  • 1.5 lbs baby potatoes (halved)
  • ½ cup grated Parmesan cheese
  • 1 cup chicken broth
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh parsley Adds color and freshness.

Preparation
  1. Begin by placing the halved baby potatoes in the bottom of your crockpot.
  2. Season your chicken breasts with salt and pepper on both sides. Sprinkle Italian seasoning on top.
  3. Place the seasoned chicken on top of the potatoes in the crockpot.
  4. In a small bowl, mix the minced garlic, chicken broth, and grated parmesan cheese until it reaches a creamy consistency.
  5. Pour the creamy garlic mixture over the chicken and potatoes in the crockpot.
  6. Cover the crockpot and cook on low for 6-8 hours or high for 4-5 hours, until the chicken is tender and cooked through.
  7. Garnish with fresh parsley and enjoy your flavorful meal!

To serve, pair with a garden salad or steamed veggies. For storing leftovers, keep in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
