Ingredients
  

For the crackers
  • 2 cups Chickpea Flour Also known as besan.
  • 1/4 cup Olive Oil Plus more for brushing.
  • 1/2 cup Water Adjust as necessary.
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Sea Salt To taste.
  • 1/2 teaspoon Freshly Cracked Black Pepper Optional.
  • 2 tablespoons Sesame Seeds or Flax Seeds Optional for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the chickpea flour, garlic powder, oregano, thyme, sea salt, and black pepper.
  3. Create a well in the center and add olive oil and water. Stir until a dough forms, adding more water if too dry.
  4. Knead the dough on a clean surface until smooth. Sprinkle more chickpea flour if the dough is too sticky.
  5. Roll out the dough to about 1/8 inch thick and cut into desired shapes using a pizza cutter or knife.
  6. Transfer to the baking sheet, brush with olive oil, and sprinkle sesame or flax seeds on top.
  7. Bake for 20-25 minutes, or until golden brown and crispy.
  8. Let cool on a wire rack before storing in an airtight container.

Notes

Store in an airtight container at room temperature for 5-7 days or freeze for longer storage. Reheat at 350°F (175°C) for 5-10 minutes to retain crispness.
