Ingredients
  

For the Cookie Crust
  • 1 package sugar cookie dough (about 16.5 ounces)
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
For the Fruit Toppings
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 each banana, sliced
  • 1 each kiwi, peeled and sliced
  • to taste mint leaves for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Roll out the sugar cookie dough on a lightly floured surface into a large circle, about ¼ inch thick. Transfer to a parchment-lined baking sheet and bake for 10-12 minutes or until golden. Let it cool completely.
  3. In a medium bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. Once the cookie crust has cooled, spread the cream cheese frosting evenly on top.
  5. Arrange your fresh fruit on top of the frosting in any design you like.
  6. Cut into slices like a pizza, serve, and watch it disappear!

Notes

Serve immediately after assembling to avoid a soggy crust. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
