Fried Chicken Ingredients
  • 2 cups cooked chicken, shredded or chopped Use leftover chicken or freshly cooked chicken.
  • 1 cup all-purpose flour
  • 1 cup breadcbs (preferably Panko for extra crunch)
  • 1 cup buttermilk (or regular milk with a splash of vinegar) For the coating.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1 cup Alfredo sauce (store-bought or homemade) For drizzling.
  • Corn or flour tortillas For wrapping the chicken.
  • Shredded lettuce, diced tomatoes, and shredded cheese (for toppings) Add your favorite toppings.
  • Olive oil (for frying) For frying the chicken.

Method
 

Preparation
  1. If you have leftover chicken, shred or chop it into bite-sized pieces. For freshly cooked chicken, let it cool to room temperature before cutting.
  2. In one bowl, pour the buttermilk. In a separate bowl, combine flour, garlic powder, onion powder, salt, and pepper. In a third bowl, place the breadcbs.
  3. Dip each piece of chicken first in the buttermilk, then in the flour mixture, back to the buttermilk, and finally coat with breadcbs. Make sure each piece is fully coated.
Cooking
  1. In a deep skillet, heat olive oil over medium heat. Carefully add the breaded chicken pieces to the hot oil.
  2. Fry for about 5-7 minutes on each side until golden brown and cooked through. Transfer the fried chicken onto a wire rack to drain excess oil.
Assembly
  1. Warm the tortillas in a separate pan or in the microwave.
  2. Fill each tortilla with a generous amount of fried chicken, drizzle Alfredo sauce over the top, and add desired toppings like lettuce, tomatoes, and cheese.
Serving

Notes

For juicier chicken, try using chicken thighs. Avoid overcrowding the pan while frying to maintain oil temperature. For an alternative sauce, a spicy ranch dressing works well. Store leftovers in an airtight container in the fridge for up to three days, and reheat in the oven for best results.
