  • 1 cup Feta cheese, crumbled The feta adds a wonderful tanginess.
  • ½ cup Fresh mint leaves, chopped Use fresh mint for best results.
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • Salt and pepper, to taste Add gradually, as you can always add more.

Preparation
  1. Start by cutting your fresh watermelon into bite-sized cubes.
  2. Place the crumbled feta cheese in a separate bowl.
  3. Rinse the fresh mint leaves, pat them dry, and give them a rough chop.
  4. In a large mixing bowl, combine the watermelon, feta, and chopped mint. Gently toss to combine.
  5. Drizzle the olive oil and balsamic vinegar over the salad. Sprinkle with salt and pepper to taste.
  6. This salad is best served fresh to keep the watermelon crunchy and the feta creamy.

Notes

If you can't find fresh mint, try using basil for a unique twist. Prepare the ingredients just before serving for the freshest taste. This salad is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
