  • 4 pieces boneless, skinless chicken breasts Approximately 1.5 lbs
  • 2 large onions Sliced thin
  • 2 tablespoons olive oil
  • to taste Salt & pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup beef or chicken broth Ensure halal
  • 1.5 cups grated Swiss cheese Or your preferred halal cheese
  • 1 cup French’s fried onions For topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced onions and sauté for about 10-12 minutes until they become golden brown and caramelized. Stir occasionally to prevent burning.
  4. While the onions are cooking, season the chicken breasts with salt, pepper, garlic powder, and dried thyme in a bowl.
  5. In the same skillet, push the onions to one side, increase the heat to medium-high, and add the chicken breasts. Sear them for about 5 minutes on each side or until browned.
  6. Once the chicken is browned, pour in the broth and let it simmer for an additional 5 minutes.
  7. Transfer everything into a baking dish. Top with the sautéed onions and cover the chicken completely with grated Swiss cheese.
Baking
  1. Place in the preheated oven and bake for 20-25 minutes or until the cheese is bubbling and golden.
  2. In the final 5 minutes of baking, sprinkle the French’s fried onions on top.
Serving
  1. Once baked, remove from the oven and let it rest for a few minutes before serving.
  2. Enjoy this delightful dish with a side salad or your favorite grain!

Notes

For substitutions, try using mozzarella or a blend of your favorite halal cheeses. Ensure to watch the onions while cooking to achieve perfect caramelization. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
