Preparation
- In a bowl, combine rolled oats and milk. Allow them to soak for about 10 minutes to soften.
- In a separate bowl, combine the flour, baking powder, sugar, and salt. Stir well.
- After the oats have soaked, add the eggs and vanilla extract to the oat mixture. Stir to combine.
- Slowly add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Cooking
- Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with oil or cooking spray.
- Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook the other side until golden brown (about 2-3 minutes each side).
Serving
- Remove the pancakes from the skillet and keep them warm. Serve with your favorite toppings.
Notes
To make the best pancakes, don’t overmix the batter and let it rest for a few minutes for fluffiness. Try adding chocolate chips, nuts, or fruits to customize!
