Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons baking powder
  • 1 tablespoon sugar (optional) Adjust according to taste
  • 1 teaspoon salt A pinch if preferred
Wet Ingredients
  • 1 cup rolled oats To be soaked in milk
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, combine rolled oats and milk. Allow them to soak for about 10 minutes to soften.
  2. In a separate bowl, combine the flour, baking powder, sugar, and salt. Stir well.
  3. After the oats have soaked, add the eggs and vanilla extract to the oat mixture. Stir to combine.
  4. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with oil or cooking spray.
  2. Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook the other side until golden brown (about 2-3 minutes each side).
Serving
  1. Remove the pancakes from the skillet and keep them warm. Serve with your favorite toppings.

Notes

To make the best pancakes, don’t overmix the batter and let it rest for a few minutes for fluffiness. Try adding chocolate chips, nuts, or fruits to customize!
