Preparation
- In a bowl, combine rolled oats and milk. Allow them to soak for about 10 minutes.
- In another bowl, whisk together the flour, baking powder, sugar, and salt.
- In the bowl of soaked oats, beat in the egg, melted butter or coconut oil, and vanilla extract if using. Mix well.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined. It's okay if there are a few lumps – don't overmix!
Cooking
- Preheat your skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes.
- Flip and cook for an additional 2-3 minutes, until golden brown.
Serving
- Enjoy warm with your favorite toppings such as maple syrup, fresh fruits, or a dollop of yogurt.
Notes
Use fresh ingredients for best results. Don't overmix to keep pancakes fluffy. Optional: Fold in chocolate chips, nuts, or blueberries.
