Pancake Batter
  • 1 cup rolled oats Whole grain oats work best.
  • 1 cup milk (dairy or non-dairy) Use your preferred type of milk.
  • 1 cup all-purpose flour Can be substituted with whole wheat flour.
  • 1 tablespoon baking powder Ensure it's fresh for best results.
  • 1 tablespoon sugar (or honey) Adjust based on desired sweetness.
  • 1/2 teaspoon salt Enhances flavor.
  • 1 large egg Provides structure.
  • 2 tablespoons melted butter or coconut oil Either adds richness and flavor.
  • 1 teaspoon vanilla extract Optional, adds aroma and flavor.

Method
 

Preparation
  1. In a bowl, combine rolled oats and milk. Allow them to soak for about 10 minutes.
  2. In another bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In the bowl of soaked oats, beat in the egg, melted butter or coconut oil, and vanilla extract if using. Mix well.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined. It's okay if there are a few lumps – don't overmix!
Cooking
  1. Preheat your skillet over medium heat and lightly grease it.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes.
  3. Flip and cook for an additional 2-3 minutes, until golden brown.
Serving
  1. Enjoy warm with your favorite toppings such as maple syrup, fresh fruits, or a dollop of yogurt.

Notes

Use fresh ingredients for best results. Don't overmix to keep pancakes fluffy. Optional: Fold in chocolate chips, nuts, or blueberries.
