  • 1 ripe banana mashed
  • 1 large egg
  • 2 tablespoons melted butter plus extra for cooking

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix the buttermilk, mashed banana, egg, and melted butter until combined.
  3. Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid over-mixing.
Cooking
  1. Preheat a griddle or non-stick frying pan over medium heat and lightly grease it with butter.
  2. Pour about 1/4 cup of batter for each pancake onto the hot griddle, cooking for about 2–3 minutes or until bubbles form on the surface.
  3. Flip the pancakes and cook for an additional 2 minutes, or until golden brown and cooked through.
Serving

Notes
