- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the buttermilk, mashed banana, egg, and melted butter until combined.

Cooking
- Preheat a griddle or non-stick frying pan over medium heat and lightly grease it with butter.
- Pour about 1/4 cup of batter for each pancake onto the hot griddle, cooking for about 2–3 minutes or until bubbles form on the surface.
- Flip the pancakes and cook for an additional 2 minutes, or until golden brown and cooked through.

Notes
