  • 1 cup basil pesto sauce (store-bought or homemade) Ensure high-quality pesto for enhanced flavor.
  • 1 cup cherry tomatoes, halved Use ripe cherry tomatoes for sweetness.
  • 2 tablespoons olive oil Extra virgin olive oil is recommended.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
Cooking
  1. Heat the olive oil in an oven-safe skillet over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  2. Spread the basil pesto evenly over the top of the chicken.
  3. Scatter the halved cherry tomatoes around the chicken in the skillet.
  4. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through, reaching an internal temperature of 165°F (75°C).
  5. Let the dish rest for 5 minutes before serving.
  6. If desired, sprinkle Parmesan cheese on top before serving.

Notes

For variations, try using turkey or grilled vegetables in place of chicken. Store leftovers in the fridge for up to 3 days, or freeze the chicken and pesto separately for longer storage.
