Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
Cooking
- Heat the olive oil in an oven-safe skillet over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
- Spread the basil pesto evenly over the top of the chicken.
- Scatter the halved cherry tomatoes around the chicken in the skillet.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through, reaching an internal temperature of 165°F (75°C).
- Let the dish rest for 5 minutes before serving.
- If desired, sprinkle Parmesan cheese on top before serving.
Notes
For variations, try using turkey or grilled vegetables in place of chicken. Store leftovers in the fridge for up to 3 days, or freeze the chicken and pesto separately for longer storage.
