Ingredients

For the Kabobs
  • 1 pound chicken breast, cut into cubes
  • 1 piece bell pepper, cut into pieces
  • 1 piece onion, cut into pieces
  • 1 piece zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Method

Preparation of Ingredients
  1. Begin by cutting the chicken breast into bite-sized cubes. Chop the bell pepper, onion, and zucchini into similar sizes to ensure even cooking.
Marinade Creation
  1. In a mixing bowl, combine the olive oil, soy sauce, lemon juice, garlic powder, paprika, salt, and pepper. Whisk until well combined.
Marinading Chicken
  1. Add the chicken cubes to the marinade, ensuring each piece is coated. Let it marinate for at least 20 minutes; longer is even better for maximizing flavor!
Skewering
  1. Once the chicken is marinated, start assembling your kabobs. Alternate threading chicken, bell pepper, onion, and zucchini onto the skewers. Aim for a colorful and interesting presentation.
Grilling
  1. Preheat your grill over medium heat. Once hot, place the skewers on the grill. Cook for 15-20 minutes, turning occasionally until the chicken is thoroughly cooked and veggies are tender.
Serving
  1. Carefully remove the skewers from the grill and let them rest for a few minutes. Serve hot, and enjoy!

Notes

If you have leftovers, store your kabobs in an airtight container in the refrigerator for up to three days. For longer storage, freeze for about three months. Reheat on the grill or in the oven at low temperature for best texture.
