Ingredients
  

For the Marinade
  • 1 cup coconut milk Use full-fat coconut milk for best flavor.
  • 1/4 cup fresh basil, finely chopped Fresh basil enhances flavor significantly.
  • 2 tablespoons lime juice Freshly squeezed for best results.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 tablespoon honey Optional, for a hint of sweetness.

For the Chicken
  • 4 pieces boneless, skinless chicken breasts Ensure they are of uniform thickness for even cooking.
Optional Garnish

Method
 

Preparation
  1. In a bowl, whisk together coconut milk, chopped basil, lime juice, minced garlic, honey, salt, and pepper until well combined.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's coated evenly. Seal and marinate in the refrigerator for at least 30 minutes or up to 2 hours for deeper flavor.
Cooking
  1. Heat your grill to medium-high heat.
  2. Remove the chicken from the marinade and let the excess drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
Serving
  1. Remove from grill and let it rest for a few minutes. Slice the chicken if desired, garnish with fresh basil and lime wedges, and serve!

Notes

For deeper flavor, marinate the chicken overnight. Use fresh ingredients whenever possible. Keep an eye on cooking to avoid drying the chicken out.
