Ingredients
  

For the Fish
  • 4 fillets Mahi Mahi
  • 2 tablespoons paprika
  • 1 tablespoon cayenne pepper Adjust for spice level.
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil For frying.
For the Mango Salsa
  • 1 mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Method
 

Preparation
  1. Start by patting the mahi mahi fillets dry with a paper towel.
  2. In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Rub the spice mixture generously over both sides of each fillet.
  4. In a large skillet, heat olive oil over medium-high heat until shimmering.
Cooking
  1. Carefully add the seasoned mahi mahi fillets to the hot skillet. Cook for about 4-5 minutes without moving them.
  2. Flip and cook for an additional 3-4 minutes until the fish flakes easily with a fork.
Making Mango Salsa
  1. While the fish is cooking, combine the diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl. Mix gently and set aside.
Serving
  1. Once the fish is cooked to perfection, serve it hot topped with the fresh mango salsa.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat. You can substitute mahi mahi with firm white fish like tilapia or cod.
