Method
- Prepare the zucchini:
- Wash and dry zucchini, then slice into ¼-inch thick rounds.
- Pat slices dry to remove excess moisture for crispiness.
- Make the coating:
- In a mixing bowl, combine Parmesan cheese, breadcrumbs, garlic powder, salt, black pepper, and any optional seasonings.
- Coat the zucchini:
- Lightly brush or spray zucchini slices with olive oil.
- Toss slices in the Parmesan-breadcrumb mixture until evenly coated.
- Air fry the chips:
- Preheat the air fryer to 400°F (200°C).
- Place zucchini slices in a single layer in the air fryer basket (work in batches if needed).
- Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
- Serve:
- Serve immediately for best crispiness, optionally with marinara sauce or ranch dressing for dipping.
Notes
Do not overcrowd the air fryer basket; this ensures even crisping.
For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.
Zucchini chips are best eaten fresh, as they lose crispness if stored.
Experiment with spices like paprika, cayenne, or Italian herbs to customize flavor.
