Crispy, cheesy, and perfectly seasoned, these Air Fryer Parmesan Zucchini Chips are a healthy and delicious snack or side dish. Quick to make, they’re baked to golden perfection with minimal oil and maximum flavor.

Ingredients

  • 2 medium zucchini sliced into thin rounds
  • ¼ cup grated Parmesan cheese
  • ¼ cup breadcrumbs panko recommended for extra crispiness
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil or cooking spray
  • Optional: paprika Italian seasoning, or crushed red pepper for extra flavor

Equipment

  • Air fryer
  • Mixing bowl
  • Knife and cutting board
  • Measuring cups and spoons
  • Plate or tray for coating

Method

  1. Prepare the zucchini:
  2. Wash and dry zucchini, then slice into ¼-inch thick rounds.
  3. Pat slices dry to remove excess moisture for crispiness.
  4. Make the coating:
  5. In a mixing bowl, combine Parmesan cheese, breadcrumbs, garlic powder, salt, black pepper, and any optional seasonings.
  6. Coat the zucchini:
  7. Lightly brush or spray zucchini slices with olive oil.
  8. Toss slices in the Parmesan-breadcrumb mixture until evenly coated.
  9. Air fry the chips:
  10. Preheat the air fryer to 400°F (200°C).
  11. Place zucchini slices in a single layer in the air fryer basket (work in batches if needed).
  12. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
  13. Serve:
  14. Serve immediately for best crispiness, optionally with marinara sauce or ranch dressing for dipping.

Notes

Do not overcrowd the air fryer basket; this ensures even crisping.
For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.
Zucchini chips are best eaten fresh, as they lose crispness if stored.
Experiment with spices like paprika, cayenne, or Italian herbs to customize flavor.
