  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted) Ensure it's melted for easy mixing.
Raspberry Filling
  • 1/2 cup raspberry jam Use high-quality for the best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line an 8-inch square baking dish with parchment paper, leaving some overhang.
Mixing the Ingredients
  1. In a mixing bowl, combine the flour, rolled oats, and brown sugar.
  2. Pour in the melted butter and mix until crumbly.
  3. Reserve about 1/2 cup of the mixture for the topping.
  4. Press the remaining mixture into the lined baking dish.
Assembly and Baking
  1. Spread the raspberry jam over the crust.
  2. Crumble the reserved oat mixture over the jam.
  3. Bake for approximately 25 minutes, or until golden brown.
Cooling
  1. Remove from oven and let cool completely before lifting out.
  2. Cut into bars and serve.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for up to 2 months.
