Ingredients
  

Falafel
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup parsley, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt and pepper to taste
  • 1/2 cup flour (or chickpea flour for a gluten-free option)
  • Oil for frying
Salad Base
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
Tahini Dressing
  • 1/4 cup tahini
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Water to thin as needed

Method
 

Prepare the Falafel Mixture
  1. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper. Pulse until the mixture is coarse and holds together when pressed.
Form Falafel Balls
  1. Transfer the mixture to a bowl and stir in the flour. Let it sit for about 15 minutes. Then, using damp hands, form small balls, about the size of a golf ball.
Fry the Falafel
  1. Heat oil in a deep pan over medium heat. Once hot, carefully add falafel balls in batches, frying until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.
Mix the Salad
  1. In a large bowl, combine the mixed greens, diced cucumber, halved cherry tomatoes, and sliced red onion.
Prepare the Dressing
  1. In a small bowl, whisk together tahini, lemon juice, olive oil, salt, and pepper. Add water gradually to reach your desired consistency.
Assemble the Bowl
  1. To serve, place a generous portion of salad in a bowl, top with crispy falafel, and drizzle with tahini dressing.

Notes

If you have leftovers, store the falafel in an airtight container in the refrigerator for up to 3 days. It's best to store the salad components separately to maintain freshness. Reheat the falafel in a preheated oven at 350°F (175°C) for about 10-15 minutes. For freezing, shape the falafel balls and freeze before frying for up to 3 months.
