- Wash and chop the mixed greens. Dice the cucumber and halve the cherry tomatoes. If using, slice the olives or leave them whole.
- In a small bowl, mix the tahini dressing with fresh lemon juice and season with salt and pepper to taste. Stir until smooth.
Cooking
- If using store-bought falafel, follow the package instructions for reheating, typically around 10-15 minutes in the oven. For homemade falafel, fry or bake them according to your preference until golden brown and crispy.
Assembly
- In a large serving bowl, layer the mixed greens as the base. Add the diced cucumber, cherry tomatoes, and red onion.
- Place the warm falafel on top of the fresh veggies. Drizzle generously with tahini dressing and toss gently.
- Add olives on top, if desired. Serve immediately and enjoy!
Notes
If you’re out of tahini, try using a homemade yogurt dressing—just be sure it’s Halal-friendly! Have the falafel ready just before assembling your salad to keep them warm and crispy. Avoid overcrowding your bowl or skipping the tahini dressing as it brings it all together.
