  • 2 pieces English muffins, split in half
  • 4 large eggs
  • 1 cup shredded cheese (mozzarella or cheddar) Choose your favorite type of cheese.
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup fresh spinach, chopped
  • to taste Salt and pepper Adjust seasonings as preferred.
  • Olive oil (optional for greasing) Use if desired for added flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Split the English muffins in half and place them on a baking sheet, optionally brushing with olive oil.
  3. In a bowl, whisk together the eggs and season with salt and pepper.
Assembly and Baking
  1. Pour equal portions of the whisked eggs onto each muffin half.
  2. Top with diced bell peppers and chopped spinach, and sprinkle shredded cheese on top.
  3. Bake in the preheated oven for about 10–12 minutes until the eggs are set and the cheese is melted and bubbly.
Serving
  1. Remove from the oven, let cool slightly, and serve warm.
