Preparation
- Preheat the oven to 375°F (190°C).
- Split the English muffins in half and place them on a baking sheet, optionally brushing with olive oil.
- In a bowl, whisk together the eggs and season with salt and pepper.
Assembly and Baking
- Pour equal portions of the whisked eggs onto each muffin half.
- Top with diced bell peppers and chopped spinach, and sprinkle shredded cheese on top.
- Bake in the preheated oven for about 10–12 minutes until the eggs are set and the cheese is melted and bubbly.
Serving
- Remove from the oven, let cool slightly, and serve warm.
